When I choose “Select Sensor” with my Kinect Azure plugged in, the Kinect Azure label flashes for a brief moment in the dropdown then it goes blank. When I choose “apply” below it, the application crashes.

maybe it could be that there is some connection issue. Could you please try to replug the sensor? If this has no effect, could you please check whether sensor works in a stable way with Kinect Azure Viewer (you can download the SDK that contains this program from here: https://docs.microsoft.com/en-us/azure/kinect-dk/sensor-sdk-download)?.
